The Ultimate Sourdough Toast with Avocado, Egg & Cheese

There's nothing quite like a thick slice of sourdough bread toasted to golden perfection, layered with creamy avocado, a perfectly cooked egg, and melted cheese. This recipe is simple, satisfying, and packed with flavor — the kind of breakfast (or brunch, or lunch) that makes you feel like everything is going to be okay.

Sourdough isn't just delicious — it's also easier to digest than regular bread, thanks to the natural fermentation process that breaks down gluten and phytic acid. Ingredients

Serves 1

  • 2 thick slices of sourdough bread
  • 1 ripe avocado
  • 2 large eggs
  • 2 slices of your favorite cheese (provolone, gruyère, or cheddar work great)
  • 1 tablespoon butter or olive oil
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper
  • Red pepper flakes (optional)
  • Fresh herbs for garnish: chives, microgreens, or parsley

Instructions

Step 1 — Toast the Sourdough

Toast your sourdough slices until deeply golden and crispy on the outside but still slightly chewy inside. You can use a toaster, or better yet, toast them in a dry skillet over medium heat for 2–3 minutes per side for a crispier crust.

Step 2 — Make the Avocado Smash

Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add the lemon juice, a pinch of salt, and a few grinds of black pepper. Mash with a fork to your preferred consistency — we like it chunky with a few whole pieces for texture.

Step 3 — Cook the Eggs

Heat butter or olive oil in a non-stick pan over medium-low heat. Crack in the eggs and cook to your liking:

  • Sunny-side up: Cook without flipping until the whites are set but the yolk is still runny (~3 minutes).
  • Over easy: Flip gently and cook for 30 more seconds.
  • Poached: Bring a pot of water to a gentle simmer, add a splash of vinegar, swirl, and drop in the egg. Cook for 3 minutes.

Step 4 — Melt the Cheese

In the last minute of cooking your egg, lay a slice of cheese directly over the egg and cover the pan with a lid. Let the steam melt the cheese to gooey perfection.

Step 5 — Assemble

Spread a generous layer of smashed avocado on each toasted sourdough slice. Top with the cheesy egg. Finish with red pepper flakes, fresh herbs, and an extra crack of black pepper.
